Healthier Potatoes Au Gratin

Cooking Time: 35 minutes
Serves 4


  • 2 lbs. Yukon gold potatoes
  • 2 cups 1% milk
  • 3 tbsp. flour
  • 2 cups Cheddar cheese

Cooking Instructions

Wash the potatoes and cut into slices about 1/4 inch thick.  Put in a pot, cover with water and add 1 tbsp. salt.  Bring to a boil, reduce to a simmer and cook until tender, about 5 minutes.  Meanwhile, put the milk and flour in a saucepan and bring to a simmer, whisking often.  When it has thickened, take it off the heat, add 1 cup cheese and season with salt and pepper.  Place half the potatoes in a 6 quart baking dish, top with half of the cheese sauce.  Place the remaining potatoes on top, cover with the rest of the sauce and sprinkle with the last cup of cheese. Bake at 350* for 20 minutes, then broil for an additional 2 minutes, until cheese is light brown and bubbly.
