Mashed Broccoli Potatoes

Serves: 4


  • 5 ea. Yukon gold potatoes, about 2 lbs.
  • 2 cups Broccoli florets
  • 1 cup Cheddar cheese
  • 1/2 cup Sour cream
  • 1/2 cup Whole milk

 Cooking Instructions

Wash and quarter the potatoes.  Put them in a pot, cover with water (by about 3 inches), season with a tablespoon of salt and bring to a boil.  Lower to a simmer, and cook until the potatoes are tender and almost cooked through, about 20 minutes.  Add the broccoli and cook another 5 minutes.  Strain and return to the pot.  Using a potato masher, or a heavy whisk, mash the potatoes and broccoli.  Add the cheese, milk and sour cream and mix well.  Season to taste with salt and pepper.
