Tomato and Olive Relish

Weekly Menu:

Pork chops, grilled peaches, sautéed spinach, jalapeño corn bread

Grilled swordfish with tomato-olive relish, orzo, roasted broccoli

Grilled chicken, quinoa and vegetable salad with feta

Roasted chicken with pan gravy, smashed new potatoes and three bean salad

Tilapia piccata, farfalle pasta, sugar snap peas


Tomato Olive Relish

Prep time: 15 minutes Serves 4


2 medium heirloom tomatoes, diced

1/4 cup sun dried tomatoes, packed in oil, diced

1/4 cup kalamata olives, chopped

1/2 shallot, minced

1 garlic clove, minced

1/3 cup extra virgin olive oil

2 Tbsp. red wine vinegar

Cooking Instructions:

Combine all ingredients and season to taste with salt and pepper.  Allow to marinate for at least an hour to let the flavors incorporate. Serve with grilled fish or chicken.
