Ginger Pear and Almond Muffins

Ginger Pear and Almond Muffins

1 1/4 cups Whole wheat flour

1/2 cup Granulated Sugar

1/2 teaspoon Ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon nutmeg

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup almond pieces

1 cup diced pear

1/2 cup applesauce

1/2 cup oil

2 eggs

1 teaspoon vanilla extract

Cooking Instructions

Preheat your oven to 350 degrees.  Line a muffin tin with baking cups, or spray with nonstick cooking spray.  In a mixing bowl, whisk together the flour, sugar, spices, baking powder, baking soda and salt.  In another bowl, beat the eggs, then whisk in the applesauce, oil and vanilla.  Fold in the pears and almonds. Combine the wet and dry ingredients, but do not over mix.  Divide the batter evenly among the muffin tins and bake for about 20 minutes, or until a toothpick inserted in the center comes out clean.  Allow to cool fully before storing.  These keep well in the refrigerator or freezer.
