Quinoa, Corn and Black Bean Salad

Weekly Menu:

Grilled Shrimp with Quinoa, black bean and corn salad with lemon vinaigrette

Grilled Chicken with Watermelon, cucumber and feta salad and whole wheat cous cous

Italian sausage, cheese tortellini, roasted cherry tomato and vegetable sauce

Seared salmon with roasted chickpeas, broccoli and onion

Pork shoulder carnitas with whole wheat tortillas, guacamole and sautéed summer squash


Quinoa, Corn and Black Bean Salad

Cooking Time: 35 minutes Serves 4 (main course)


2 cups cooked Quinoa

2 cups cooked black beans, or canned, rinsed

2 cups fresh corn kernels

1 shallot, minced

1 lemon, juiced

1/4 cup olive oil

Handful fresh cilantro, chopped

Handful fresh basil, chopped

Salt & Pepper, to taste

Cooking Instructions:

Combine all ingredients and season to taste.  Serve with grilled chicken or shrimp.
